1 lb. hamburger
2 onions, sliced
2 cans mushroom soup
4 cups potatoes, raw, sliced or diced
2 cups carrots, sliced
Brown meat and onions. Layer potatoes and carrots in casserole dish. Pour soup over top. Bake at 350 degrees F. for 45 minutes.

1 (4 to 5 pound) corned beef brisket
8 whole black peppercorns
2 bay leaves
2 cloves minced garlic
10 to 12 new potatoes (red)
2 medium (or 1 large) onions
2 cups baby carrots
1 large head cabbage, cut into wedges
Rinse corned beef with cold water. Place brisket (and juices from the package) in a large pot. Cover with water. Add onions, garlic, peppercorns and bay leaves. Bring to a boil, reduce heat, cover and simmer about 3 to 3 1/2 hours, until tender.
Remove meat from broth and set aside.
Place potatoes, carrots and cabbage into broth, cover and cook for 15 to 20 minutes.
Slice the corned beef into thin slices (best cut across the grain). Serve with the vegetables.
Good served with horseradish, or mustard. A great addition to this meal is a heavy bread.

2-3 oz packages cream cheese
1/4 cup Dry onion soup mix
1/2 tsp. salt
1/2 ground nutmeg
2-1/2 cup milk
2 tbsp. flour
Thoroughly combine the meat, breadcrumbs, cheese soup mix, salt, nutmeg and 1/2 cup of the milk. Shape into about 40 small balls; brown lightly in large skillet, shaking skillet to keep balls round. Cover and cook 20 to 25 mins or until done. Remove meat; drain off excess fat, leaving 1/4 cup fat in skillet. Blend flour into fat, stir in remaining milk all at once. Cook and stir until thick and bubbly. Return meatballs to skillet; cover and cook until heated through. Makes 10 to 12 servings.

2 large onions cut in 1/2 inch slices, separated into rings
1 can sliced mushrooms (drain, reserve liquid)
1 can cream of mushroom soup
1/2 cup dry sherry (cooking sherry)
1 1/2 tsp garlic salt
3 cups hot cooked rice
Cut steak into thin strips. In large skillet, brown meat in oil over high heat. Add onions, sauté until tender and crisp. Blend soup, sherry, liquid reserved from mushrooms, garlic salt. Pour over steak. Add mushrooms, reduce heat, cover and simmer for 1 hour or until steak is tender. Or cover and bake at 350 degrees. Serve over fluffy rice.
Makes 6 servings.
