(This is a fun salad I loved helping my mom make it whenever Christmas dinner was at our house. It really made the table look festive. I remember being surprised that mayo and whipped cream tasted good together. :) ~KL )
1 pkg lemon jello
1 cup hot water
1/2 cup cottage cheese, drained
1 cup whipped cream
1 cup crushed pineapple
1/2 cup pecans, broken
1/2 cup maraschino cherries, chopped
Green food coloring
Mayonaise with extra whipped cream for garnish
Wax paper cups, pointed (Look in the Dixie cup aisle of your favorite big box store)
Drain pineapple. Use juice plus enough water to make 1 cup liquid. Dissolve jello in hot water. Add juice-water. Let partially set. When partially set, fold in whipped cream. Fold in cottage cheese that has been put through a sieve, pineapple, pecan pieces, cherries and food coloring. Blend well. Pour mixture into pointed wax paper cups to chill. When set and ready to serve, peel off cups, and place 'tree' on lettuce leaf on small plate or in small bowl. Put dollops of whipped cream/mayo on top of cone to garnish, let small amount run down sides. Top with a cherry.

2 tablespoons prepared mustard
2 10 oz. pkgs frozen mixed vegetables, cooked and well drained
1/2 cup diced celery
1/2 cup finely chopped onion
1 small jar pimiento, chopped
Combine vinegar, water, sugar, flour and mustard. Cook until thick while hot; pour over remaining ingredients. Combine well and let stand in refrigerator for 24 hours.

Finely chop the basil. Chop the tomatoes and cucumbers into bite sized pieces. Toss together in a salad bowl. Top with the vinaigrette before serving.

1/2 head iceberg lettuce or one stalk romaine lettuce
1/2 lb baby spinach leaves
3 hard boiled eggs, sliced
1/2 lb bacon
1/2 red onion (sliced in rings)
Dressing:
1/4 cup sugar
1/4 cup white vinegar
1/2 cup mayo
pour over lettuce/spinach mixture just before serving
Mix together:
