~ Gelatin, Pudding, Assorted Desserts ~
6 oz pkg. cherry flavor gelatin
1-1/4 cups boiling water
3/4 cup Burgundy wine or water
21 oz can cherry fruit pie filling
In large bowl, dissolve gelatin in boiling water, stir in wine. Refrigerate until slightly thickened, about 50 minutes. Stir in pie filling. Pour into a five cup mold or individual molds. Refrigerate at least three hours or until firm. Unmold onto lettuce lined serving plate. Garnish as desired...9 to 10 servings.

Stir over med heat until thick and bubbly. Remove from heat and stir in the cherries. Turn into a silver or heat-proof bowl. Heat brandy. Ignite brandy and pour or ladle over cherry mixture. Blend into sauce. Serve at once over vanilla or cherry ice cream.

2 (16-oz.) cartons of vanilla ice cream
6 Tbsp. Grape Nuts cereal or other brand of nutty cereal
2 Tbsp. chopped pecans
If using the cherry flavored liquor, combine pie filling and liquor in a bowl and mix well. Layer cherry mix and ice cream in parfait glasses. Combine cereal and pecans and sprinkle evenly over each parfait glass. Chill and serve.

My mother only made this dessert for Christmas and Easter. It looked lovely, and was a special treat.
3 ice cube trays
1 small bowl

1 package strawberry Jello

2 envelopes of Knox unflavored gelatin
1/4 cup cold water
1/4 cup boiling water

1/2 cup sugar
1 pint heavy cream, whipped
vanilla wafers (crushed to crumbs)
Dissolve each flavored gelatin separately in their own mixing bowl/cup with 1 1/2 cups boiling water each. Pour each flavor into an ice cube tray and chill until firm. Dissolve unflavored gelatin in 1/4 cup cold water, add boiling water and mix well. Add pineapple to this mixture. Pour into pan and chill until slightly thickened. Add sugar to whipped cream and mix. Fold slightly thickened pineapple/gelatin mixture into whipped cream and then add the 'ice cubes' of flavored gelatin. Pour entire mixture into 9 x 12 pan lined with vanilla wafer crumbs, sprinkling a few crumbs on top of mixture. Chill in fridge overnight.
Cut into squares to serve on plates or small bowl. Yields 12 servings
(Hints: Spray the ice cube trays and the pan with non stick cooking spray to make gelatin removal easier. Sugar free Jello is an option too. You can switch up the combination of three flavors to your preferences, or add one more flavor for a total of four without having to add another packet of unflavored gelatin.)

1 can (20-oz) of crushed pineapple
1 large package (6-oz) of orange gelatin
3 cups of shredded carrot
1/2 cup of mayonnaise
1 envelope of Knox gelatin
Prepare the orange juice as directed on package. Boil 2 cups of orange juice, and then add orange gelatin. Dissolve contents of Knox envelope in the remaining orange juice, and then incorporate to the heated mixture. Then you add the rest of the ingredients and put it in a blender for 2 minutes. Pour into a mold. Chill until firm.

1 1 pound 4 1/2 ounce can crushed pineapple
1 3 1/2 ounce package coconut
1 6 1/2 ounce package marshmallows
1 cup sour cream
Drain fruit. Add marshmallows, coconut, sour cream. Mix well and chill overnight.

6 drops of red food coloring (optional)
Boil milk at low heat with the rose petals and sugar for about 15 minutes. Strain and let it cool for a while; add the almonds. Put it in a blender adding the drops of food coloring; transfer to a container and freeze about 3 hours until it sets. Serve it in ice cream bowls and garnish with rose petals.

2 tbsp. Peanut butter
Combine sugar and syrup in a saucepan. Bring to a boil. Do not cook. Add 3/4 cup peanut butter and the cereal. Mix and spread in a buttered 9 x 12 pan. Melt chips with the remaining peanut butter. Spread over cereal mixture. Refrigerate to set.

1 small Jell-O mold or 8 indiv. molds
On stove in saucepan combine and boil the water, cloves, vinegar, cinnamon and sugar together for 4 minutes. Add 1 cup peach juice and boil 1 minute; stain it. Pour over orange jell-o, add peaches and refrigerate. Makes 8 individual molds or a small mold.

1/4 cup sugar
1/2 teaspoon cinnamon
In deep fryer or heavy saucepan, heat 2 to 3 inches of oil to 375 degrees F. Fry tortilla pieces in hot oil on each side, about 30 to 45 seconds or until slightly puffed and golden brown. Drain on paper towels. Combine sugar and cinnamon. Sprinkle warm chips with mixture. 40 chips.
